Never heard of lees?

Don't worry, you're not alone.
To put it simply, lees is made up of all the remaining antioxidants, amino acids, polyphenols, etc... that settle to the bottom of the barrel at the end of the winemaking process...

Lees 101

1. It all starts with grapes. We source our Lees from wineries using sustainably grown fruit! So everything you use comes from eco-minded businesses.

2. Fermentation works its magic in tanks and casks in our winemakers' cellars. The then wine is moved down to barrel to undergo the aging process. It is here that the settling of lees takes place.

​

3. Once the fermentation and aging is complete, the wine is "racked" or siphoned off of the lees that have settled to the bottom. This wine is bottled and makes its way to your dinner parties. 

​

4. After being separated from their more popular counterpart (the wine we all know and love), The Lees Cellar rescues the lees.


5. The lees get their limelight after the wine steals the show at the dinner party while you unwind with a rejuvenating
face mask.
